Who do you main in fighting games?
Because it's really about the characters in the end, isn't it? It wouldn't matter how great a fighting game's gameplay is, if none of its characters resonated with us, odds are most of us wouldn't play it and learn how to deal with a character's shortcomings, and take advantage of their positives.
Street Fighter Series (Super Street Fighter II and a little bit of IV.)

Sadly, I've never really been huge into fighting games outside of Smash Bros.
I know there's some that may debate whether it qualifies as a fighter, but I digress.
Regarding mains, it's really hard for me to pick just one or two from a whole lot of Nintendo favorites.
If I could choose only three:
* Donkey Kong
A well-rounded powerhouse that isn't too slow. Landing that windup punch is always satisfying,
and as a fan of Donkey Konga, that Final Smash never ceases to make me smile
* Peach
Eheh, yep me too. A good mix of moves and versatility wrapped in a pretty pink bow.
In the right hands, it'll be her opponents who need rescued
* Mr. Game & Watch
Mainly for nostalgia's sake, but his moves are also unique and fun to use

Like Nai, I haven't really played a lot of fighting games aside from the Smash Bros. series. But I'll share my mains anyway.
These are in no particular order, but I do main three characters: Peach (yep, same here), Sonic, and Kirby. (Though I do have to agree about these three characters' Final Smashes; they all really suck. )

Eheh, I'm glad I'm not the only one who enjoys a good role reversal.
In turn, that's probably why I enjoy playing Zelda as well.
Wait, I already locked in my three choices... oh I forgot about Wario, another favorite of mine. Why? Because he's Wario, duh. And let's not forget...

Wow, I thought I was the only Peach fan here! You guys are blowing me away. XD If Paragon posts and says he plays as Peach too I'm going to laugh so hard. =P And I don't know how you do it with Sonic, SV, he was hard for me to use in battle, so I stuck to Link and Diddy Kong. XD
Mr. Game and Watch is pretty epic too, I love his chair attack. ^^ On Melee, I've beaten Arcade, Adventure, and All-Stars on Very Hard as every character in the game, so it's probably the only fighting game besides Super Street Fighter II where I know the weaknesses and strengths of each character. XD Even beat the challenge mode too and got every trophy! (Screw PSN Trophies, this is where achievements are really rewarded! =P ) Besides Metroid Prime Hunters, Melee's the only game I've beaten 100% complete, but it took five years to get there, so nothing to brag about. XD
Also, Nai, there isn't a limit on characters you can main. I usually stick to three characters, personally, but sometimes there are others I don't mind using for variety's sake, like Zelda and Pikachu. ^^

Well, I do take Peach from time to time in Smash Bros.
But overall, I main Yoshi, Ganondorf and Captain Falcon.

Sakura, Cammy and Ryu in "Street Fighter IV"

It's official, we would have one heck of a peachy party if all of us were playing Brawl, or Melee, in the same room. =P But yeah, those are good characters to main, Paragon, I would know after playing as all of them before. XD Ganondorf is the undisputed king at Homerun mode, hands down. >:-D
And it's cool to see another SFII player in here! If you have ZSNES I would love to see how you play as those characters in Netplay, all the AI bots do to me is just abuse their specials, especially Ryu. D: (He's a nightmare on the hardest difficulty setting with his fireball spamming, even though the guy has plenty of other useful attacks to pummel you with.)

Looks like Luke and I are the only ones who play other fighting games than Nintendo's own masterpiece.
Anyway, for the main fighting series I play:
Smash Bros: Link, Shiek, Mario, Peach, and Ness are my top characters.
Street Fighter: Guile - It HAS to be Guile. I'll play Chun Li if I need to switch it up, but it's just about always Guile. I've still got my SNES console too lol.
Tekken: Hwoarang and Ling Xiaoyu.
MvC 3 : Tron Bonne, Amaterasu, and Chun Li. MvC 3 is not nearly one of my go-to fighting games, but the appearance of Tron Bonne and Amaterasu had me needing to get it.
Mortal Kombat: I haven't played in an EXTREMELY long time, and only played some of the older ones, but it was Sub-Zero for me.
Anyway, for the main fighting series I play:

Street Fighter: Guile - It HAS to be Guile. I'll play Chun Li if I need to switch it up, but it's just about always Guile. I've still got my SNES console too lol.

Totally forgot about Tekken! Went ahead and edited my post with my mains. Used to play as Law and Michael a lot when I first got Tekken 2 as a kid, but now that I've discovered there were tons of unlockable characters on the PSX version, I'm going back and replaying it for those other characters; I'd love to try Anna Williams specificially, IMO. =P
And wow, Peach is pretty popular in this topic. So far everyone's confessed to using her! XD
Don't cry Shantae! We'd play as you way more than Peach if you were in the cast, maybe even our top mains.
Don't forget Paragon has too! XD
Haha, it's practically the reverse for me! XD Guile always felt like the easiest character to cream in the whole roster to me, but he does have a lot of solid normal moves that make up for his lack of specials. (It's too bad the AI bots rarely take advantage of that, so he's easily pummeled as an AI.) It would blow me away to watch a human player handle him. =P
